I was having company for lunch and needed a simple dessert. In trying to decide what to make I saw that I had some apples and this apple crisp recipe turned out to be the perfect ending to a lovely meal. I adapted the recipe from Baking by Dorie Greenspan. It would be a great way to use frozen apples.

Apple Crisp
For the Topping
- 1/4 cup all purpose flour
- 1/2 cup brown sugar
- 1/2 cup old fashioned oats
- 1 tsp ground cinnamon
- 1/4 tsp ground ginger
- 1 stick cold, unsalted butter, cut into 4 pieces
For the Filling
- 5 medium apples, peeled, cored and cut into 1/2″ chunks
- 1/2 cup dried cranberries
- 2/3 cup sugar
- 1 TBS all purpose flour
- Preheat oven to 375 and grease a 8 x 8″ or 7 x 10″ baking pan.
Make the Topping
- Put all of the ingredients in a food processor and pulse just until you get large curd like pieces. Alternatively, add all to a bowl and cut butter in with a pastry blender until same end is achieved.
- Chill in refrigerator until needed
Make the Filling
- Toss all of the ingredients together in a large bowl
- Spread the apples evenly in the prepared baking dish
- Evenly sprinkle the topping over the apples
- Bake in the preheated oven for 40 – 45 minutes until the topping is golden the juices are bubbling
- Cool on a wire rack
- Dust with powdered sugar before serving if desired
How Was the Apple Crisp?
Do you have to ask? It was Fall on a dessert plate. The apples still had some chew to them and were in a cinnamon-y, sugary sauce and then there was the oatmeal topping. All of it was just yum, yum, yum.
