Chocolate Banana Cookies

a soft cookie that tastes like your favorite banana bread with chocolate and nuts

Ingredients

  • 3/4 cup granulated sugar
  • 3/4 cup brown sugar
  • 1/2 cup unsalted butter at room temperature
  • 3 overripe bananas, mashed
  • 1 large egg
  • 1 tsp vanilla
  • 2 cups all purpose flour
  • 1/2 cup cocoa powder
  • 1 tsp baking powder
  • 1 tsp salt
  • 1/2 cup mini chocolate chips
  • 1/2 cup toasted walnut pieces, roughly chopped
  • powdered sugar for dusting

Instructions

  • Preheat oven to 350
  • Line two baking sheets with parchment or silicone mats
  • In a medium bowl whisk together the flour, cocoa, baking soda and salt
  • In a stand mixer with the paddle attached cream together the butter and two sugars until light and fluffy.
  • Add the egg, mixing well. Then the vanilla and mashed banana. The batter will look a bit curdled but don’t worry.
  • Pour in the flour mixture and beat on low just until combined.
  • Remove from the stand and stir in the chips and nuts until evenly distributed.
  • Drop the batter onto the prepared sheets with a medium cookie scoop. If you don’t have a scoop use two spoon.
  • Flatten the dough balls with a glass.
  • Bake in the preheated oven for 12 minutes until set.
  • Remove to a wire rack to cool
  • Dust with powdered sugar before serving.

Notes

These are a soft cookie

cook time is for two batches. You might end up with more depending upon how large you make your cookies
