My Opinion:
When I was offered this book for review I admit I was intrigued by the concept and I expected it to have a lot recipes utilizing an instant pot but I was wrong on that front. This book shows how to utilize prep work like freezing garlic and herbs and taking advantage of fully cooked chicken and the like to have a meal on the table in 30 minutes or less. The fish recipe I chose to try used braising as the method of cooking and it took a rock solid filet of fish to tender and delicious in the alloted time.
I can see where with a little prep work and targeted shopping this book would make getting dinner on the table a lot easier for busy moms. If the recipe I tried is any indication the owner of this book is in for easy to prepare recipes that produce a delicious result.

Citrus Basil Halibut Recipe
Serves 2
- 12 oz halibut fillet (frozen)
- 1 tsp unsalted butter
- 1/2 tsp salt
- 1 clove garlic, minced
- juice of half a lemon
- juice of one orange or 1/2 cup high quality orange juice with pulp
- 1/4 cup chopped basil
- 1 tsp brown sugar
- Rinse fish in cold water to remove and ice and frost. Pat dry.
- Season with salt on both sides.
- Heat a large skillet over medium heat. When hot add butter and garlic. Saute for one minute then add lemon juice and orange juice.
- Add the halibut and cover the pan. Simmer for 4 minutes, turn the fish and simmer for 4 more minutes. The fish should flake easily with a fork.
- Remove the fish from the skillet to a plate and keep warm
- Add the basil to the brown sugar to the pan and stir. Season to taste.
- Return the fish to the pan to heat through.
- Serve over rice
How Was the Citrus Basil Halibut Recipe?
It was so good! The fish was cooked perfectly and the sauce was delicious; still tart but not too tart. The basil was a wonderful complement to the orange and lemon flavors. We both enjoyed this halibut recipe very much. I suspect this sauce would work very well on any white fish and on scallops or shrimp for that matter.
This will go on the list of favorite recipes with Chilean sea bass in lemon sauce and butter baked cod.
