Citrus Basil Halibut

citrus halibut

A wonderful recipe full of citrus flavors adapted from from The 30 Minute Cooking From Frozen Cookbook

The original recipe serves 6 and was made with cod. I used halibut and made it to serve 2.


  • 12 oz halibut fillet
  • 1 tsp unsalted butter
  • 1/2 tsp salt
  • 1 clove garlic, minced
  • juice of half a lemon
  • juice of one orange or 1/2 cup high quality orange juice with pulp
  • 1/4 cup chopped basil
  • 1 tsp brown sugar


  • Rinse fish in cold water to remove and ice and frost. Pat dry.
  • Season with salt on both sides.
  • Heat a large skillet over medium heat. When hot add butter and garlic. Saute for one minute then add lemon juice and orange juice.
  • Add the halibut and cover the pan. Simmer for 4 minutes, turn the fish and simmer for 4 more minutes. The fish should flake easily with a fork.
  • Remove the fish from the skillet to a plate and keep warm
  • Add the basil to the brown sugar to the pan and stir. Season to taste.
  • Return the fish to the pan to heat through.
  • Serve over rice
