Cod in an Apple Ginger Sauce on Couscous – an Instant Pot Recipe

On nights when I don’t feel well I love the ease of an electric pressure cooker or instant pot recipe. It let’s me put together a good meal for the hubby like cod in apple ginger sauce and then I can go back and lie down. Don’t get me wrong – he’d make his own dinner if I asked him too but this is so easy and I like to feel I am doing something on my bad days.

Instant Pot Recipe – Cod in Apple Ginger Sauce

Serves one but can easily be doubled

  • 1 6 – 8oz piece of cod
  • 1/4 cup peppers cut into strips – assorted colors if possible*
  • 1/2 cup of apple cider
  • 1/4 cup water
  • 1 TBS grated gingerroot
  • 1/2 tsp salt plus more to taste
  • 1/4 cup raw, organic spinach leaves
  • 1/2 cup couscous 
  • 1 tsp unsalted butter
  • 1 tsp salt
  • 1 cup water

  • Mix together the apple cider, water and grated gingerroot and add it to the instant pot.
  • Place the cod in the apple cider mixture, sprinkle with salt and top with the pepper strips.
  • Seal the instant pot and set for “rice.” On my machine that is 12 minutes.
  • While the fish is cooking make the couscous – bring the 1 cup of water to a boil in a medium saucepan and add 1/2 cup couscous, 1 tsp butter, and 1 tsp salt. Cover and turn off the heat. Let sit until ready to serve dinner
  • Once the cycle has run release the pressure and remove the lid.

  • To plate: add 1 cup of couscous topped by the spinach, then the fish and the peppers. Ladle some of the sauce over top.

How Was the Instant Pot Recipe for Cod in Apple Ginger Sauce?

I made this for the husband as I wasn’t feeling well and he really enjoyed it.  This is one of the reasons I love having the electric pressure cooker available. It makes it so easy to pull together a delicious meal for him. The couscous takes no effort to cook and I had the spinach in the ‘fridge so he had a colorful, healthy and tasty dinner. – a win/win for sure.

I also make him a flavorful instant pot salmon dinner that he enjoys. It’s probably one of my most used small appliances outside of my KitchenAids.

Notes

*I keep sliced peppers in the freezer for the husband to use or to add to his dinners. They freeze beautifully.
