Cookie Recipe – Chocolate Snickerdoodles: Baking for the Firemen

  • 2 1/4 cups all purpose flour
  • 1/2 cup cocoa
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1 cup (2 sticks) unsalted butter, at room temperature
  • 1 1/2 cups brown sugar
  • 1/4 cup sugar in the raw (or granulated sugar)
  • 2 large eggs
  • 1 tsp pure vanilla
  • 1 TBS cinnamon


  1. Preheat oven to 350°
  2. Whisk together in a bowl the flour, cocoa, baking powder and salt. Set aside
  3. Cream butter and brown sugar in a stand mixer until light and fluffy.
  4. Add the eggs, one at a time, mixing well with each addition.
  5. Add the vanilla.
  6. Add the flour mixture and stir on low just until combined.
  7. In a small bowl mix the sugar in the raw and the cinnamon.
  8. Using a small scoop drop the dough into the sugar mixture and roll it around.
  9. Place the dough balls on a greased cookie sheet or one lined with parchment or silicone mats.
  10. Bake in the preheated oven for 7 minutes then switch racks and bake for another 8 minutes.
  11. Remove to wire racks to cool completely.
