Easy Shrimp Recipe: Shrimp with Tzatziki in Batbout (Moroccan Pitas)

I am sure that by now you are all aware that I am a big fan of shrimp.  Coming from New Jersey we used to eat a lot of seafood but here in beef country we don’t get as much as we used to. I now generally only get to use frozen shrimp but I’ve found it does work very well. Enjoy this easy shrimp recipe. You don’t have to make the Batbout you can substitute store bought pita.

Mediterranean Shrimp with Tzatziki in Batbout

Serves 2

12 large shrimp
1 tsp olive oil
1 TBS dry sherry or white wine
1/2 tsp dried oregano
1/2 tsp dried basil
1/2 tsp dried parsley
2 tsp fresh lemon juice

For the Tzatziki:
8 oz plain yogurt
1 medium cucumber, preferably organic
1 garlic clove
2 tsp fresh lemon juice
salt to taste

3 – 4 Batbout or pita breads

Make the Tzatziki:
Drain the yogurt, in cheesecloth, for at least an hour and preferably overnight.
Place the drained yogurt in a bowl
Shred the cucumber and place in a colander with a generous amount of salt. Mix well. let sit for an hour.
Squeeze the shredded cucumber to remove the water and add to the drained yogurt.
Finely chop or press the garlic clove and add to the mixture.
Add the lemon juice and stir well. Taste and adjust seasoning if necessary.
Thaw the shrimp and add them to a bowl with the olive oil, wine, dried herbs and lemon juice.

Heat a griddle or cast iron pan over medium high heat until hot.
Add the shrimp, without crowding them, and cook for 2 minutes on each side until they are just done. Do not over cook.

To Serve:

Carefully cut open the Batbout, add some Tzatziki and then 3 or 4 shrimp.

It is fun and not at all difficult to make your own pita/Batbout Here is a video showing how they puff up on the griddle.

The batbout freeze beautifully so don’t be put off by how many the recipe makes. You can pull one out of the freezer and it thaws in less than 10 minutes. I make them pretty often as I find them a wonderful vehicle for sandwiches or a snack.

They were very good. Deliciously sweet and yummy with the tzatziki which, if you haven’t had it, is a wonderful sauce. I look forward to it every year when the cucumbers come in. I use it on chicken and I have been known to just dip a batbout in some and call that lunch. OK – tzatziki is my favorite sauce.

Notes

I do not include prep and cook times for making the pita breads

I include the drain time for the yogurt for the tzatziki in prep time
