I am very pleased to share (and taste test) the recipe for Penelope’s yellow cake recipe from the Unofficial Bridgerton Cookbook by Lex Taylor. I was sent a copy at no charge. All opinions are my own.

About the Author:

Lex Taylor is the author of Grill Fire, was the winner of Esquire’s “The Next Great Burger,” and has been featured on Chopped and Beat Bobby Flay. Lex specializes in traditional cooking techniques such as smoking, curing, pickling, and pastries. Combining his love of food, history, and popular culture, Lex is known to improvise amazing recipes for popular television series, including his favorite Bridgerton. 

My Opinion:

This is a fun cookbook for any member of the Bridgerton fandom. I have seen the show but I have not read any of the books. The recipes are true to the topic with little tidbits before and after about either characters in the book or life during the Regency.

Some recipes are well known such as macarons and meringues, while others are a bit tied to their time like beef heart and a Regency pie. I did find several that look intriguing and that I will be attempting down the road.

The cake I did demonstrate for my blog post was one of the best vanilla cakes I have ever had so that is a good thing. It did use 6 eggs so I suspect that had a lot to do with why it was such a good cake!

All in all this is a fun cookbook and would make a delightful gift for any fan of Bridgerton – the movie or the books.

Penelope’s Yellow Cake Recipe

serves 12

  • 6 large eggs
  • 1 1/2 cups granulated sugar
  • 1 1/2 cups vegetable (or other neutral) oil
  • 2 teaspoons vanilla extract
  • 1 teaspoon salt
  • 2 1/2 teaspoons baking powder
  • 2 cups all purpose flour

For the Topping:

  • 4 cups sliced strawberries 
  • 1/4 cup granulated sugar
  • 1 cup heavy cream
  • 3 TBS confectioner’s sugar + more if needed
  • Preheat the oven to 35o and grease a 9 x 13″ baking dish with nonstick cooking spray.

  • Using a hand mixer, beat eggs in a large bowl until frothy and pale.

  • Add remaining ingredients, one at a time, mixing thoroughly between each addition.

  • Pour batter into prepared dish and bake 30* minutes until a toothpick inserted at center comes out clean.
  • Cool on a wire rack

  • Serve warm or at room temperature

*mine took closer to 4o minutes to bake. I am currently having a love/hate (well really more hate) relationship with my oven so I can only note what I experienced.

How Was Penelope’s Yellow Cake Recipe?

I have to say that this is one tasty yellow cake recipe. It’s moist and a lot denser than I thought it would be with all of those eggs. The flavor is delectable – the vanilla really comes through. The berries and whipped cream take it over the top. It doesn’t need the fancy dress but we all know that sometimes a little bit of frippery is just the thing. 

Like the birthday cake I made all dressed up in Italian meringue. Sometimes you just want plain, and sometimes you want fancy. This cake looks plain but has a fancy taste.

A wonderfully moist and rich cake which I have chosen to top with fresh strawberries in sugar and some fresh whipped cream.

Notes

This cake is wonderful on its own but I decided to add some fruit and whipped cream to it. If you would like to do the same I had included the addition to the recipe. If you are a purist the cake is truly delightful.
