Peppercorn and Coriander Crusted Pork Recipe

Ingredients

- 2 TBS coriander seeds
- 1 TBS black peppercorns
- 2 TBS honey mustard
- 2 tsp salt
- 2 – 3 boneless pork chops, trimmed
- 1 TBS olive oil
Instructions
- Heat coriander seeds and peppercorns in a skillet over medium heat until they are fragrant, stirring occasionally about 4 minutes
- Let cool about 10 minutes and then coarsely crush with a mortar and pestle or transfer to a zip bag and crush with a frying pan.
- Preheat oven to 350
- Stir together the honey mustard, crushed spices and salt. Rub all over the pork chops and let marinate 20 minutes.
- Heat oil in a large, ovenproof skillet, over medium high heat.
- Add the pork and cook evenly on all sides, about 5 minutes
- Transfer to the oven to finish cooking until the meat reaches 145 – about 12 – 15 minutes
- Remove from the oven and let rest.

I served the pork with rice, a tomato salad and applesauce
