Maple Roasted Butternut Squash

Oven roasted butternut squash with maple syrup and thyme


  • 1/2 butternut squash, peeled, seeded and cut into chunks
  • 1/4 cup diced red onion
  • 2 apples, peeled, cored and cut into chunks
  • 1 TBS olive oil
  • 2 TBS pure maple syrup
  • salt and pepper to taste
  • 1/2 tsp dried thyme

Cooked rice for serving


  1. Preheat oven to 350
  2. In a medium baking dish, mix together the chunks of squash, apple and onion.
  3. Drizzle with olive oil and maple syrup, sprinkle with salt. pepper, and thyme. Stir to mix.
  4. Roast in the preheated oven until the squash is soft, about 30 – 40 minutes.
  5. Serve over hot rice
