Salmon Dinner Ideas: Salmon with Apples and Thyme

As I have written many a time – the husband loves salmon and I do not. Therefore I am always coming up with salmon dinner ideas for him and I make myself something else to eat. For example – last night I made him the below salmon and apples with thyme and I had a loaded baked potato. 

We were both happy. I thoroughly enjoyed my meal and he loved his dinner. It doesn’t get much better than that, now does it?

Salmon Dinner:  Salmon with Apples and Thyme

Serves 1 but can be doubled

  • 1 6 oz salmon fillet
  • 2 TBS flour mixed with 1 tsp salt
  • 1 apple
  • 1/4 cup diced onion
  • 1 cup apple cider
  • 1 TBS maple syrup
  • 1 tsp dried thyme or 1 TBS fresh thyme
  • 1 tsp butter

1 cup of cooked rice

  • Preheat oven to 400

how to make the apples in sauce

  • Cut apple into small dice
  • Mince onion
  • Heat about 1 tsp of olive oil in a medium saute pan. Add the onion and cook until soft. Add the apple and cook for about 3 minutes until the apple starts to soften. Remove from pan and set aside in a bowl.
  • Return the pan to the heat and add the apple cider and maple syrup and bring to a boil.
  • Reduce the cider mixture by 2/3rds. Taste and season with salt and pepper and stir in the thyme. Turn off the heat and add the butter if using. Let it melt into the sauce.
  • Stir in the apples and onions and set aside.
  • Heat a small fry pan over medium high heat.

  • Add the flour and 1 tsp salt to a small plate and mix together.
  • Dredge the salmon fillet in the flour mixture.

  • Place the fillet skin side down in the pan and pan fry for three minutes. Turn and cook for three minutes. Remove the pan the oven to finish cooking – 15 to 20 minutes depending on the thickness of your fillet
  • While the fish is cooking warm up the apples.

  • To plate the salmon dinner idea: place the fish on top of cooked rice and add the sauce. Sprinkle with chopped parsley if desired.

How Was the Salmon Dinner Idea?

The husband loved it. I know I write that every time I present a recipe for cooking salmon but he truly has enjoyed every one I have put in front of him. And trust me, he would tell me if he didn’t like something.

I just popped my baked potato in the oven when I started preparing his meal. By the time his fish was done it was all cooked and I just had to add my toppings. This way we were both happy with our dinner.

Thankfully I just found a seriously good price on Chilean sea bass so I will now have that in the freezer so that when I make salmon for him I can have the sea bass and we will both enjoy fish for dinner. Hooray! I do enjoy a good Chilean sea bass recipe now and then, that’s for sure.
