1 6 oz salmon fillet
2 TBS flour mixed with 1 tsp salt
1 apple
1/4 cup diced onion
1 cup apple cider
1 TBS maple syrup
1 tsp dried thyme or 1 TBS fresh thyme
1 tsp butter
Instructions
Preheat oven to 400
Cut apple into small dice
Mince onion
Heat about 1 tsp of olive oil in a medium saute pan. Add the onion and cook until soft. Add the apple and cook for about 3 minutes until the apple starts to soften. Remove from pan and set aside in a bowl.
Return the pan to the heat and add the apple cider and maple syrup and bring to a boil.
Reduce the cider mixture by 2/3rds. Taste and season with salt and pepper and stir in the thyme. Turn off the heat and add the butter if using. Let it melt into the sauce.
Stir in the apples and onions and set aside.
Heat a small fry pan over medium high heat.
Add the flour and 1 tsp salt to a small plate and mix together.
Dredge the salmon fillet in the flour mixture.
Place the fillet skin side up in the pan and pan fry for three minutes. Turn and cook for three minutes. Remove the pan the oven to finish cooking – 15 to 20 minutes depending on the thickness of your fillet
While the fish is cooking warm up the apples.
To plate: place the fish on top of cooked rice and add the sauce. Sprinkle with chopped parsley if desired.
