Salmon Dinner Ideas: Salmon with Apples and Thyme

Ingredients

  • 1 6 oz salmon fillet
  • 2 TBS flour mixed with 1 tsp salt
  • 1 apple
  • 1/4 cup diced onion
  • 1 cup apple cider
  • 1 TBS maple syrup
  • 1 tsp dried thyme or 1 TBS fresh thyme
  • 1 tsp butter

Instructions

  • Preheat oven to 400
  • Cut apple into small dice
  • Mince onion
  • Heat about 1 tsp of olive oil in a medium saute pan. Add the onion and cook until soft. Add the apple and cook for about 3 minutes until the apple starts to soften. Remove from pan and set aside in a bowl.
  • Return the pan to the heat and add the apple cider and maple syrup and bring to a boil.
  • Reduce the cider mixture by 2/3rds. Taste and season with salt and pepper and stir in the thyme. Turn off the heat and add the butter if using. Let it melt into the sauce.
  • Stir in the apples and onions and set aside.
  • Heat a small fry pan over medium high heat.
  • Add the flour and 1 tsp salt to a small plate and mix together.
  • Dredge the salmon fillet in the flour mixture.
  • Place the fillet skin side up in the pan and pan fry for three minutes. Turn and cook for three minutes. Remove the pan the oven to finish cooking – 15 to 20 minutes depending on the thickness of your fillet
  • While the fish is cooking warm up the apples.
  • To plate: place the fish on top of cooked rice and add the sauce. Sprinkle with chopped parsley if desired.
