If you are a regular visitor to the blog you know by now that my husband’s favorite dish is salmon. If it’s your first visit well, my husband’s favorite dish is salmon. That is why you will find the salmon recipe list is so long. I try and make it for him as often as I can. Some of his favorites include salmon with rhubarb and blueberry sauce, and salmon with honey lemon vinaigrette. I think this will become a favorite as well, salmon with brown sugar chipotle glaze. It’s got all the tastes he likes; the salmon of course plus a little bit of sweet and a touch of heat. If you are searching for simple salmon recipes you have come to the right place. This is about as easy as it gets.
I served it with a yummy rice salad and a spinach salad to round out the meal. Since I don’t care for salmon the accompaniments were a perfect meal on their own for me. I will showcase the rice salad recipe at another time so be on the lookout.
Salmon with Brown Sugar/Chipotle Glaze
2 – 5 oz pieces salmon
2 TBSP brown sugar
3 tsp Chipotle Olive Oil
salt to taste
paprika
Preheat oven to 350°
Salt both sides of salmon and place in a baking dish that has been sprayed with cooking spray.
Mix together the brown sugar and Chipoltle Olive Oil*. Add salt to taste.
*If you don’t have chipotle olive oil I *think* you would be able to mix chipotle powder with olive oil to come up with a similar flavor profile. I do not know this for sure as I made this with the oil and I suspect using the spice would make for a stronger flavor. But it’s certainly worth experimenting if you want to give it a try. Just don’t be too heavy handed.
Pat half of the brown sugar mixture on each salmon fillet.
Bake in the preheated oven for about 8 to 10 minutes or more depending upon the thickness of your fillets.
Dust with paprika.
Serve with rice salad and a green salad.
Simple Salmon Recipes Make the Hubby Happy
Hubby LOVED it – he said the sweetness of the brown sugar was offset by the underlying smoky heat of the chipotle in the olive oil. He said the fish was cooked perfectly and the paprika added another flavor punch that was delicious. Add this to your list of simple salmon recipes – it was a big hit here.
What worked really well with this meal was that I made an accompanying rice salad that paired well with the fish but also worked as a main dish for me since as I have noted, I don’t like salmon. With the addition of a easy to make spinach salad we were both able to sit down and enjoy dinner together without me having to prepare two separate meals which is what I usually end up doing when I cook him his favorite fish.
This is another reason I love rice salads so much; they can serve as sides or as the main. It just depends on how much you serve. You can also play with the ingredients any way you want. They are some of the most versatile recipes out there. One of my favorite rice salads is sushi salad.
