We do like to eat seafood here and the husband likes his food on the spicy side. I am not so much a fan so when I am not in the mood to eat I will cook him a dinner that has that spice he loves. Or sometimes I will just make dinner two ways so he can have the heat and I can enjoy a less biting meal. On this occasion I made him a spicy seafood medley recipe and tempered it a bit with an orange raisin rice.

Spicy Seafood Medley Recipe
Serves 1 but can be doubled
- 1 1 oz piece of Salmon
- 3.5 oz shrimp and scallops mixed (2 large scallops, 3 jumbo shrimp)
- 1 tsp cumin
- 1 tsp 5 spice powder
- 1 tsp cayenne
- 1 tsp salt
- cooking spray
- 1/2 cup prepared jasmine rice
- 1 tsp orange zest
- 1/2 tsp tarragon
- 1 TBS raisins
- Heat a nonstick pan over medium heat.
- Spray with cooking spray.
- When the pan is hot add the salmon and scallops and cook for 3 minutes on each side. (Remove, set aside and keep warm. (If your piece of salmon is thicker it may need to cook longer.)
- Add the shrimp to the pan and cook for about two minutes on each side until they just cook through.
- While the seafood is cooking add the orange zest, tarragon and raisins to the half cup of cooked Jasmine rice. Heat in the microwave or over medium heat (add a little water to the pan so the rice doesn’t stick) until the rice is warmed through.
- Serve with a steamed side vegetable of choice.
How Was the Seafood Medley Recipe?
We both thought this seafood medley recipe was pretty tasty. There was just the right amount of heat for the sweet scallops and the shrimp. He also enjoyed the spices on his piece of salmon. The raisins in the rice were a nice counterpoint to the spice.
This is a meal that doesn’t have a lot of calories so if you are counting them you will find this to be tasty and if not filling at least the heat in the spice will have your taste buds dancing. I came up with this when the husband was trying to lose some weight.
