About the Author:

As a child who grew up in Anaheim, California, Ashley Craft could recite the Star Tours ride by heart, navigate the Park without a map, and fell asleep to the sound of Disneyland fireworks each night in her bedroom. After two internships at Walt Disney World and many, many more visits to the Disney Parks, Ashley is now one of the leading experts of Disneyland and Walt Disney World.

A Sweet Taste from the Cookbook

Maple Creme Brulee

  • 2 cups heavy cream
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon maple extract
  • 1 large egg
  • 3 large egg yolks
  • 1/4 cup pure maple syrup
  • 6 teaspoons granulated sugar
  • 6 Maple Sugar Cookies
  1. Preheat oven to 325°F.
  2. To make Crème Brûlée: In a medium saucepan over medium heat, add heavy cream, vanilla, and maple extract. Heat until bubbles start to form around edge of pan, 3–5 minutes. Remove from heat.
  3. In a large bowl, whisk together egg, egg yolks, and maple syrup. While continuously mixing, slowly pour hot cream mix into egg mixture. Whisk to combine, then pour through a mesh sieve to remove any egg solids.
  4. Place six ramekins in a large baking dish and fill dish with room-temperature water up to nearly the top of ramekins. Pour equal amounts of filling into each ramekin. Carefully slide into oven. Bake 40 minutes or until custard sets with a slight wiggle.
