It is no secret that I love to bake. I will be the first person to admit that when it comes to gluten free baking I am a little at a loss as it is not something I do very often. Gluten Free Baking Mixes: Chocolate Muffin/Cake Mix and Pancake Mix
I was sent both the Chocolate Muffin or Cake Mix and the Pancake Mix to try. Of course I tried the chocolate first. I am who I am.
It was quick and easy to mix up; just add eggs, water, and oil. This is a one bowl mix so there is very little clean up. Sometimes you want a simple project in the kitchen, amiright?
Then it was time to fill the tins. I decided to use my new baking pans and make cute, little square cakes. But there was enough batter to also make some mini cupcakes. I used a small cookie scoop to make this go neatly and easily.
They went into the oven and baked and were soon cooling on a wire rack. What is so wonderful about these little cakes is that you can have a little bit of a treat whenever you want – just add a shake of confectioner’s sugar and you are good to go.
Erm, unless you need to stay sugar free of course.
If you want to get fancy you could make a frosting but it’s really not necessary. This gluten free baking mix offers up so many possibilities. You could also make regular size muffins or a traditional 8″ round cake. I just love the versatility of this mix!
Gluten and Sugar Free
The trueats baking mix is sugar and gluten free so if you need to avoid one or both of those ingredients you can enjoy these chocolatey treats. They are also protein and fiber rich! The company uses ingredients like chickpeas, dals, buckwheat, and almonds. They provide a natural source of protein, fiber, antioxidants, vitamins and minerals.
I’ve popped these little chocolate gems into a freezer container and they are now stored for snacks for us or if company comes – not that I think they will last that long!
Trueats Pancake and Waffle Mix
I was going to use the trueats pancake and waffle mix today but we got a welcome message that our contractor was going to stop by. Since I REALLY want work to begin on this house I wasn’t going to let anything interfere with his visit.
And of course, he was late and rescheduled.
But that is OK. He brought good news. He will be able to start sooner than expected even if soon is still into next year. Hooray!
I will try the Pancake and Waffle Mix and report on Instagram when I am done. If you will recall I do make waffles on the regular for the husband as he rotates his breakfast between cereal, eggs, and waffle. I make waffles in bulk for him and put them in the freezer so he just has to pull one out and toast it up.
