Friday’s Hunt - Week 22

I can’t believe it’s time for another Friday’s Hunt! This week just flew by. It saw me dealing with some down time on the blog so I’m very sorry if you tried to visit and received an error message. All seems A-OK now and I hope it remains that way.

Starts with V

I also ended up interacting with Verizon this week as my antique flip phone died. I am now the proud owner of a brand new smartphone! I might have been the last person on earth to not have one or have ever used one but I’ve entered a new era. Most of this week’s photos were taken with it. I must admit it has a pretty impressive camera.

I was playing in the kitchen cooking dinner. I’m excited that it’s salad season here on the farm. The hubby’s been bringing me fresh spinach and lettuce for a week now and we have both been enjoying a nightly salad and what is better on a salad than vinaigrette? I make a simple vinaigrette for each salad and I usually just mix a vinegar with some olive oil and salt - rice vinegar being a favorite - but tonight I got a little fancy and made a honey lime vinaigrette. The easy recipe is at the bottom of the post if anyone is interested.

To complete a quintessential summer dinner I served the salad with some corn on the cob (not shown) and some pan grilled venison. It made for a very delicious meal.

What else? It’s also the very first photo I took with the camera on the phone. He was in my lap. He’s almost always in my lap. Silly Sherpa! But you must know by now that I take a LOT of cat photos. Sherpa is particularly photogenic - not that I’m prejudiced or anything.

Sunshine

Please correct me if I am wrong but sunshine comes from the sun. The sun is that big yellow ball in the sky - right? Well, that has been sorely lacking around these parts for the last couple of weeks. In fact I’m not sure when the last time was when we had a full, sunny day. Needless to say this photo is from my archives.

Spring is typically very rainy in my little corner of the world. Which is good for the forest and good for the garden. The hubby loves spending time in his garden. He can spend hours out there weeding and planting. My work comes at the end of the season. You can learn some of his tricks to help your plants grow by using everyday items like coffee grounds and toilet paper rolls in this post I wrote last week.

Honey Lime Vinaigrette

Ingredients

Scale
  • juice of one lime
  • 1 TBS olive oil
  • 2 tsp honey
  • 1/2 tsp salt

Instructions

  1. Add the honey to the lime juice and mix until combined
  2. Add the salt and olive oil and whisk until emulsified.
  3. Taste and adjust seasoning if necessary.
