Brownie Bites Recipe
- 1/2 cup salted butter softened (or unsalted butter plus 1/4 tsp salt)
- 1 cup granulated sugar
- 2 large eggs
- 1 tsp vanilla
- 1/2 cup cocoa powder
- 1/2 cup all purpose flour
- 1/4 tsp salt
- 1/8 tsp baking powder
- 1/2 cup confectioner’s sugar
- Preheat the oven to 350
- Line an 8″ x 5″ baking pan with parchment paper allowing a 2″ overhang. Set aside
- In the bowl of a stand mixer add butter, sugar, eggs, and vanilla. Using the flat beater attachment cream together well. Add cocoa powder, flour, baking powder and salt. Stir until combined
- Scoop batter into prepared dish. Bake 30 minutes or until toothpick inserted in the center comes out clean.
- Allow to cool completely in dish about 1 hour. Once cooled lift paper to remove brownies from the pan.
- Cut brownies into 1″ cubes.
- Put confectioner’s sugar into a brown lunch bag. Put 4 brownies into the bag and gently shake to coat. *I put the sugar in a bowl and added all of the brownie bites and gently tossed them. This worked just fine.
- Repeat until all the brownies have been coated
How Were the Brownie Bites?
This was a fun and tasty way to serve brownies. In the introduction to the recipe in The Unofficial Disney Parks Cookbook these little bites of brownie were sold at Tomorrowland in the Pizza Port restaurant.
They are very addictive little treats.
