A New Cherry Recipe - Cherry Vanilla Chip Cookies

Cherry season will soon be upon us again. I read that sentance and chuckle a bit as I look at the mini blizzard blowing outside. But I know that like years past I will have anywhere between 80 and 100 pounds of cherries that I will freeze and use for making things like Cherry Lemonade Jam. Baking is also big part of cherry season. Looking for a cherry recipe like cherry cake or these cherry vanilla chip cookies is only the start. I sometimes never know what I might make.

Cherry Vanilla Chip Cookies

Makes 6 dozen cookies

4 1/2 cups all purpose flour
1 tsp baking soda
1 tsp salt
2 cups unsalted butter, at room temperature
1 1/2 cups granulated sugar
1 1/2 cups brown sugar
4 eggs
1 TBS vanilla extract
2 vanilla beans, split and scraped (optional)
3 cups chocolate chips
2 cups chopped fresh cherries

Preheat oven to 350°
Line two or three cookie sheets with parchment or silicone mats. Alternatively grease them well.
In a large bowl whisk together the flour, salt and baking soda. Set aside
In a stand mixer with the paddle attached cream the butter and sugars until light and fluffy.
Add the eggs, one a time, mixing well after each. Scrape the sides as needed.
Add the vanilla and scraped vanilla seeds if using.
Add the flour mixture and blend on low until just combined.
Add the chocolate chips and blend until just combined.
Remove the bowl from the mixer.
Add the cherries and gently fold into the batter.

Drop the batter by heaping tablespoons or use a medium scoop, dropping about 2″ apart on the prepared sheets.
Bake in the preheated oven for 10 minutes and then rotate the pans. Bake for another 10 minutes.

Carefully remove to wire racks to cool.

How Were the Cherry Vanilla Chip Cookies?

These were a big hit with the firemen. They were also a big hit here in the yurt. I made these cookies larger than I usually do. They are also softer than these type of cookies tend to be.

The vanilla flavor sings and marries well with the cherries and the chocolate chips. The fresh cherries were moist and sweet. I was really pleased with how this cookie came out. I hope you try this cherry recipe and enjoy it as much as I did.
