Healthy Salmon Recipe: Salmon on Kale with Penne and Goji Berries

The hubby is trying to watch what he eats both for health reasons and to watch his weight. He loves salmon and it is good for him so I turn to it quite often for him as a protein. With this particular meal I added flavor with a Morrocan spice blend and tossed in some goji berries for their brightness. I love creating a healthy salmon dinner for him.

Healthy Salmon Recipe: Salmon on Kale with Penne and Goji Berries

Serves 2

1 8 oz salmon filet or two 4 oz filets
1 tsp. Moroccan spice blend or same amount cumin/allspice/chili powder mixed
3 cups chopped kale
1 cup cooked penne
2 TBS goji berries
1 TBS and 1 tsp olive oil
salt and pepper

Preheat oven to 350°
Dust both sides of the salmon filet with the spice blend.

Heat a small cast iron or other small oven safe pan until hot. Add 1 TBS olive oil.
Cook the salmon for two minutes on each side and then put it in the oven to finish cooking for 15 minutes or longer depending on the thickness of your filet.
While the fish is cooking make the kale and penne:
In a large saute pan over medium heat add 1 tsp of the olive oil.
Add the kale, season with salt and pepper and cook until just done.

Add the penne and the goji berries and heat through. (If you don’t have goji berries you can use raisins or dried cranberries)
To serve - divide the kale/penne mixture between two plates. Top with half of the 8 oz filet or the 4 oz filet.

How Was the Healthy Salmon Recipe?

I am happy to report that the hubby enjoyed his dinner. The salmon had a bit of heat and the goji berries added just enough tartness to the meal. It made enough for two so he had leftovers for the next night. He was a happy man having salmon two nights in a row. This is another easy weeknight salmon dinner for sure.

Notes

raisins or dried cranberries can be substituted for the goji berries
