This was an easy chicken dinner to put together and one that we both enjoyed. The crunch on the air fried chicken was perfect and the raw zucchini with the vinegary dressing was a perfect foil to the protein. The chicken tenders were included in my Butcher Box.

Air Fried Chicken Tenders with Maple Dijon Drizzle
- 16oz package chicken fingers
- 1/2 cup all purpose flour plus more if needed
- 1 cup bread crumbs plus more if needed
- 1 egg mixed with 1 TBS water
- salt and pepper
- 2 TBS maple syrup
- 1 TBS dijon mustard
- cooking spray
- 1 zucchini, peeled and sliced thinly
- 1 cup rice vinegar
- 2 TBS sugar
- 1 tsp salt
Preheat Air Fryer to 400*
- Bread chicken fingers: coat in flour, dredge in beaten egg, sprinkle with salt and pepper and then coat with bread crumbs. Set on baking sheet with space between pieces.
- Spray the breaded chicken with cooking spray and place into the oven on air fry or into an air fryer.
- Air fry on one side for 8 minutes, then turn, spray with cooking spray and air fry for 8 – 10 minutes until crunchy and cooked through. (If your chicken fingers are smaller than mine were, adjust cooking time accordingly.)
- While the chicken is cooking peel and slice the zucchini thinly.
- Mix together the rice vinegar and sugar.
- Pour the rice vinegar mixture over the sliced zucchini and stir. Let sit, stirring occasionally. Taste and season with salt.
- Stir together the dijon and maple syrup.
To Serve:
- Drizzle a hot chicken finger with some of the maple dijon sauce with more available on the side.
- Serve the zucchini with some of the dressing.
How Was the Air Fried Chicken and Zucchini Sunomono Style?
Yummy! While air fried chicken is never going to be as good as conventionally fried chicken – we all know it – this was pretty good. It had crunch and the maple drizzle added a hint of sweet that was just the thing.
When I eat in a Japanese restaurant the cucumber salad is one of the things I look forward to so I wanted to learn how to make it at home. While I haven’t quite mastered the deliciousness I get in the restaurant, it’s close enough for now. Probably due to the quality of the rice vinegar but I’m happy and the husband is happy so what more can I ask?
