The garden is starting to wind down – there is a freeze warning in the forecast in the next few days – but there are still zucchini to be found. There are always zucchini that get lost, like this monster I found while seeking a couple so I could make a chocolate zucchini cake recipe. I brought in an extra so I could celebrate the end of zucchini season with one last go at a couple of my favorite recipes like lemon basil zucchini or zucchini cakes.

That is one big zucchini. The husband chopped it up for the chickens and ducks and they all had one big feast. Then I took the normal sized squash that I found next to it into the yurt and started making a very delicious chocolate cake.
Chocolate Zucchini Cake
Serves 10 – 12
- 1 2/3 cups all purpose flour
- 3/4 cup high quality cocoa powder
- 2 TBS espresso powder
- 1/2 cup unsalted butter at room temperature
- 1/2 cup melted and cooled coconut oil
- 1/3/4 cups granulated sugar
- 1 tsp vanilla
- 1 tsp baking soda
- 1/2 tsp baking powder
- 1/2 tsp kosher salt
- 2 eggs
- 1/3 cup plain Greek yogurt
- 1 1/2 cups shredded zucchini
- 1/3 cup bittersweet chocolate chips
- powdered sugar for dusting
- cooking spray
- Preheat oven to 325
- Spray a 10″ round cake pan with cooking spray
- Whisk the flour, cocoa powder and espresso powder together in a medium bowl.
- In the bowl of a stand mixer combine the butter, coconut oil, sugar, vanilla, baking soda, baking powder and salt and beat until smooth.
- Add the eggs, one at a time until smooth again.
- With the mixer on low, alternate adding the flour and sour cream just until combined.
- Fold in the chips and zucchini.
- Spoon into the prepared pan.
- Bake in the preheated oven for 40 minutes (mine took closer to 50) until a tester comes out clean.
- Cool on a wire rack for about a minute then remove from the pan to cool completely.
- Serve with whipped cream and raspberries if desired. Or dust with powdered sugar
How Was the Chocolate Zucchini Cake?
This is actually one of the best cakes I’ve had in a while. Probably one of the best chocolate cakes I’ve eaten. So moist, so chocolately. The recipe in the cookbook calls for a chocolate ganache icing but I had no chocolate in the yurt (THE HORROR!) as I am waiting for some to some to be delivered. I just whipped some heavy cream and added some fresh picked raspberries. Hey, it’s a quarantine world, right? But I’ll tell you, this cake is good without any accompaniment.
Baking with the vegetables in the garden doesn’t end with zucchini; did you know that chocolate beet cake is also very delicious?
