Easy Baked Cod Recipe: Butter Baked Cod on Tumeric Honey Rice

Fish is a good for you protein so I do try to cook it as often as I can. The hubby loves salmon and I was very happy when Sitka Salmon Shares sent me a sample box to try. Also in the box were a couple of pieces of cod which is a fish I happen to love. I tried looking through my cookbooks for an easy baked cod recipe but I didn’t find any so I decided to just wing it. My result was a simple yet delicious butter baked cod which I served with my tumeric honey rice.

Baked Cod Recipe: Butter Baked Cod

Serves 2

  • 1 12 oz cod filet (thawed)
  • 1/4 cup unsalted butter, melted
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp paprika
  • 1 1/2 tsp salt
  • 2 tsp dried parsley
  • quarter of a fresh lemon
  • Preheat oven to 350°
  • Pour half the melted butter in the bottom of a baking dish.
  • Pat the cod filet dry and cut it in half.

  • Place the fish in the baking dish and evenly sprinkle the salt, garlic powder, onion powder, and paprika over the fish. Finish with the parsley
  • Bake in the preheated oven for about 12 to 15 minutes depending on the thickness of the filet.
  • Squeeze lemon over fish

How Was the Easy Baked Cod Recipe?

Oh, it was so very good! The fish was of a very high quality and the butter baking just made it all the better. The spice blend on top gave just the right amount of flavor to the sweet, mild fish. The tumeric honey rice was a perfect accompaniment to the buttery fish. The rice is simple to cook in an instant pot.

The hubby may love his fish dinners like salmon with rhubarb and blueberry sauce but I will stick to meals like this yummy cod.
