I know that in some households one partner is watching their weight and the other is not like here in the yurt. The hubby is trying to lose weight and I’m the opposite. I need to remember to eat. To celebrate Valentine’s Day I made him one of his favorite “old time” meals but it fit within the confines of the meal plan he is following which required me to keep it within 350 calories. This low calorie Valentine’s day recipe is a bit of a throwback and it is not truly “blackened” as that requires butter and when I’m cooking his diet meals there is no fat allowed. I was more seeking the heat that a traditional blackened meal would provide. I did receive the seafood I used in the recipe free of charge from Anderson Seafood.
I knew that I would need to have an accompaniment that was somewhat cooling so I made a simple yet flavorful rice for him. The orange zest gave it a nice little zing and the sweetness from the raisins was just what was needed to balance the bite from the spicy seafood. Since the hubby is a man who loves hot food he was very happy with this meal. I enjoyed it as well – it had heat but it was not overwhelming.
“Blackened” Seafood Medley on Orange Scented Rice with Raisins
Serves 2
For the low calorie portion – the spices will do both:
1 1 oz piece of Salmon
3.5 oz shrimp and scallops mixed (2 large scallops, 3 jumbo shrimp)
1 tsp cumin
1 tsp 5 spice powder
1 tsp cayenne
1 tsp salt
1/2 cup prepared jasmine rice
1 tsp orange zest
1/2 tsp tarragon
1 TBS raisins
3.5 oz side vegetable – I served snow peas
For the Second Portion:
5 scallops
3 shrimp
1 cup prepared Jasmine rice
2 tsp orange zest
1 tsp tarragon
2 TBS raisins
Mix the spices and salt together in a small bowl.
Heat a non stick pan over med-high heat until hot.
While the pan is heating drop the seafood in the bowl with the seasoning and roll around until it is well covered.
When the pan is hot add the salmon and scallops and cook for 2 minutes on each side. (I was also cooking my portion of the meal in this photo.) Remove, set aside and keep warm. Add the shrimp to the pan and cook for about a minute on each side until they just cook through.
While the seafood is cooking add the orange zest, tarragon and raisins to the half cup of Jasmine rice. Heat in the microwave or over medium heat (add a little water to the pan so the rice doesn’t stick) until the rice is warmed through. Do the same for the non-diet portion of rice.
Serve the seafood next to the rice and add your side vegetable. Enjoy!
How Was it?
A truly yummy, low calorie meal for a special occasion or for any night. We both enjoyed this one and I suspect I’ll be making it again. The spice rub is more than enough for two so I saved it for another time. It would be just as tasty on venison, chicken or pork. Isn’t it great when something is multi-purpose.
