Mini Strawberry Scones Recipe - with Vanilla Glaze

Last week’s Great British Bake Off Bakealong was crackers. I made them once and I swore I would never make them again. Other than lavash which are easy to make. But the whole cheese cracker thing - no way, no how, never again. Too much work for too little pay off. This week was a little more up my alley, petit fours. I was all up and ready to make the traditional little cake but the hubby wanted mini scones so it was a mini strawberry scones recipe that I came up with for him. He was very happy.

Mini Strawberry Scones

Mini Strawberry Scones with Vanilla Glaze

Makes 32

  • 3 cups all purpose flour
  • 1/4 cup granulated sugar
  • 6 TBS unsalted butter
  • 1 1/2 TBS baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 cup sour cream
  • 1 egg lightly beaten
  • 1 cup strawberries, cut in small pieces

For the Glaze

  • 2 TBS vanilla
  • 3/4 cup powdered sugar
  • pinch of salt
  • 1/2 tsp vanilla powder (optional)
  • Preheat oven to 400
  • Line a baking sheet with parchment paper
  • Mix the flour and sugar in a large bowl
  • Cut the butter into the flour/sugar mixture until it resembles large crumbs
  • Add the baking powder, baking soda, salt and stir to combine
  • Add the strawberries and stir to coat
  • Stir in the sour cream and beaten egg just until mixed
  • Put the dough on a lightly floured counter and gently knead for about a minute until it just comes together. The dough will be lumpy and will barely hold together.

  • Shape into a rectangle. Cut into fourths. Cut each fourth into half and cut each half into four pieces.

  • Carefully remove the cut pieces to the prepared baking sheet
  • Bake in the preheated oven for 15 – 20 minutes until lightly browned.

  • Remove to a wire rack to cool
  • While the scones are baking make the glaze: mix the vanilla, powdered sugar, salt and vanilla powder if using together until all lumps dissolve

  • After the scones cool, drizzle with the glaze

How Were the Mini Strawberry Scones?

Seriously good. And you know what? Since they are mini you can eat more of them, right? I am not sure that is really the way it is supposed to work but hey, it’s worth a try. These scones are really tender - as long as you take care to not overwork the dough. It’s easy to be tempted to as it’s a really weird dough. The first time I used this recipe it was for cherry scones. You can also check out the video I made to show how the batter.

You can see the beautiful rise these scones get from the butter and baking powder. The many layers from not overmixing leads to a wonderful texture. The vanilla glaze is a lovely complement to the strawberries in the scone. I am sure I will try this recipe with frozen strawberries in the winter. We did get some put up from the garden this year.

Notes

Don’t over mix the dough

If you want to make regular sized scones, just form the dough into a circle and cut into triangles
