Plum Recipe - Plum Blackberry Buckle

I have mentioned many a time how generous my neighbor is with the bounty from her orchard. She invited me over again and I was able to pick some apples, pears and plums. I didn’t get enough to can plum sauce but there were certainly enough to bake up a delicious plum blackberry buckle. A buckle is an old fashioned kind of coffee cake. I haven’t made one in a while so this was a real treat. This has now turned into a favorite plum recipe.

Plum Blackberry Buckle

Serves 9 - 12

For the Topping

  • 1/3 cup minus 1 TBS all purpose flour
  • 1/4 cup granulated sugar
  • 2 tsp cinnamon
  • pinch of salt
  • 5 TBS cold, unsalted butter cut into pieces

For the Cake:

  • 1 1/3 cups all purpose flour
  • 1 1/2 tsp baking powder
  • 1/2 tsp salt
  • 12 TBS unsalted butter, at room temperature
  • 1 cup granulated sugar
  • 2 tsp vanilla extract
  • 3 large eggs
  • 3 cups chopped plums (skin on)
  • 1 cup blackberries
  • powdered sugar for dusting
  • Preheat oven to 375
  • Grease a 9″ square baking dish

Make the Topping:

  • Combine the flour, sugar, cinnamon and salt in a medium bowl. Cut in the butter with a pastry blender or two butter knives until the pieces are the size of small peas. Refrigerate until needed

Make the Cake Batter:

  • Sift the flour, baking powder and salt into a bowl and set aside
  • Using a stand or hand mixer beat the butter until smooth, about 1 minute.
  • Add 1/4 cup of the sugar and the vanilla. Beat for a minute and then gradually add the remaining 3/4 cup of sugar while on medium speed.
  • Beat on medium high speed for about 3 minutes until light and fluffy.
  • Reduce speed to medium and add eggs one at a time, mixing well after each addition.
  • Scrape the bowl, add the flour mixture and mix on low until just combined.

  • Add half of the fruit and gently fold to mix. The batter is thick.

  • Evenly spread the batter in the greased pan. Distribute the remaining fruit on top.

  • Sprinkle the topping evenly over the fruit.
  • Bake in the preheated oven for 45 - 50 minutes or until a toothpick comes out clean.

  • Cool on a wire rack.
  • Dust with powdered sugar before serving if desired.

How Was the Plum Blackberry Buckle?

Really yummy.

The tart blackberries are so wonderful with the sweet plums and rich cake. It gets even better on the second day as the flavors have time to mellow. I enjoy making buckles because the base dough is so welcoming to so many different fruit pairings. You can pretty much go with what you have on hand but I will say they are happier with soft fruits as opposed to harder fruits. They are particularly tasty with berries.

Notes

The beauty of a buckle is the ability to mix and match the fruits you use. Just make sure they cook evenly
