It’s no secret that I love to bake. I generally try to have something sweet on hand so the hubby and I can have a piece of cake or a cookie or two when we watch the news at night. Life is too short to not enjoy a little treat now and again, right? When I am not in the mood to be overly fussy I turn to a bundt cake recipe as I can turn out a cake that is generally simple to make but full of flavor. On this day I was really seeking simplicity as I turned to the classic flavor of vanilla. To make sure the vanilla shines I used vanilla beans instead of extract.

Vanilla Bundt Cake
- 1 cup unsalted butter at room temperature, plus some to grease the bundt pan
- 2 1/4 cups all purpose flour, plus some to dust the bundt pan
- 1 tsp vodka
- 2 vanilla beans, split lengthwise
- 2 tsp baking powder
- 1 tsp salt
- 1 cup granulated sugar
- 1/2 cup packed brown sugar
- 3 eggs
- 1 egg yolk
- 1 cup buttermilk
Powdered sugar for dusting
- Preheat oven to 350°
- Butter the bundt pan and dust with flour. Trust me when I say it is worth taking the time to do this well.
- Scrape the seeds from the vanilla beans and add them to the vodka. You can add the remaining pods to sugar to make vanilla sugar.for another use.
- Whisk together the flour, baking powder and salt in a medium bowl and set aside.
- In a stand mixer with the paddle attached cream the butter and sugars until well combined, about three minutes.
- Add the eggs and egg yolk one at a time mixing well after each addition.
- Then add the vanilla/vodka mixture and mix.
- Add the flour mixture and buttermilk in alternating additions, beginning and ending with the flour. Three for the flour, two for the milk.
- Add the batter to the prepared pan and smooth with an offset spatula.
- Bake in the preheated oven for 45 – 50 minutes or until a toothpick comes out clean and the cake is nicely browned.
- Cool on a wire rack for about 15 minutes and remove from pan. Cool completely.
- Dust with powdered sugar.
How Was the Vanilla Bundt Cake?
This is a yummy cake! It is super moist and the vanilla flavor really comes through. I do love the simpler flavors some days. In fact, I’m starting to prefer vanilla over chocolate.
I KNOW! Sacrilege.
But a true vanilla is a delightful treat to be had and I keep a supply of beans in my freezer so I always have some on hand for recipes like this.
It’s worth it for that delicious vanilla flavor. This is a simple bundt cake recipe but it’s a good one! If you want to dress it up you can serve a slice of cake with some fruit such as sliced strawberries or blueberries with some whipped cream.
Should you prefer a bundt cake recipe with a bit more flavor you can always go for a citrus bundt cake or a chocolate banana bundt cake.
