I love using what I have canned. It’s the reason I go through all of the work of turning say, plums into Plum Sauce. This recipe can be made with my plum sauce recipe or you can substitute store bought. Either way you have a tasty meal to serve for dinner.
Chicken in Plum Sauce
serves 2
8 – 10 oz chicken breast
Cut the chicken breast into small pieces or cubes.
Mix the corn starch and all purpose flour together. Add a generous sprinkling of salt and a few twists of fresh ground pepper.
Add the chicken pieces to the cornstarch/flour mixture and make sure they are well coated.
Heat the canola oil in a saute pan over medium high heat. When the oil is ready, add the chicken pieces and lightly fry until they just have a bit of color. It doesn’t matter if they cook all the way through at this point. Turn them over to brown on the other side.
Remove them to a paper towel to dry. Clean the saute pan of the oil and return it to the heat. Add the plum sauce. I used my home canned plum sauce. Add 1/2 cup water.
Add the chicken pieces, the onions and the peppers to the plum sauce. Bring to a boil, then lower the heat and simmer until the vegetables are crisp/tender and the chicken is cooked through.
Serve over jasmine rice.
How Was the Chicken in Plum Sauce?
This was a quick and easy way to cook the chicken and it was yummy. The chicken has a delicious flavor all on its own but the plum sauce gives it a sweet/sour kick. Braising it keeps it nice and moist. The plum sauce is also delicious with pork, shrimp and scallops. It’s a delightful condiment to have in a pantry.

- 2 TBS canola oil
- 1/2 cup rough chopped onion
- 1 cup green pepper strips
- 2 cups cooked jasmine rice
