Even though the hubby is no longer fire chief I am still baking for the firemen. The new chief’s wife won’t be moving over from Washington until the school year is done. She is, from what I understand, looking forward to taking on the baking duties. I’ll keep baking but it will be for charity bake sales and for erm, personal consumption. I do love to play in the kitchen – that’s for sure! This go ’round I got to play with a marble cake recipe.
This week the hubby dropped a bit of a surprise on me – he wasn’t going to the training meeting and Monday morning he said, “oh by the way I need the treat for tonight.” Oh? Thanks for the warning honey! Good thing I have a fully stocked pantry! I therefore had to make something simple so I decided to go with a cake. I went through my cookbooks and combined two recipes and came up with this:
Coconut Chocolate Mable Cake
2 1/2 cups all purpose flour
1 TBS baking powder
1 cup whole milk
1 teaspoon pure vanilla extract
1 cup butter softened
2 cups granulated sugar
1/2 tsp salt
4 large eggs
1/4 cup cocoa powder
6 ounces dried coconut, toasted
powdered sugar for dusting
Preheat oven to 350°
Butter and flour a 10″ tube pan
Whisk together the flour and baking powder in a medium bowl.
Mix together the milk and vanilla.
Using a stand mixer with the paddle attached cream the butter until light and fluffy – about 3 minutes.
Add the sugar and salt and beat for another 3 minutes.
Add the eggs, one at a time, and beat well after each addition.
Add the flour in three additions and the milk in two, alternating between them, beginning and ending with the flour.
Remove 1/3 of the batter to a small bowl. Mix in the cocoa powder and set aside
Add the toasted coconut to the remaining batter and mix well.
Add the coconut batter to the prepared pan.
Drop the cocoa batter into the coconut batter by large spoonfuls.
Swirl with cocoa batter into the coconut batter with a knife but do not mix – you want that pretty marbled look.
Bake in the preheated oven for 1 hour and 15 minutes or until a toothpick comes out clean.
Cool on a wire rack for 15 minutes and remove from the pan.
Cool completely
Dust with powdered sugar before serving.
Since this went in for the firemen I don’t have a photo of what it looks like inside. I’m sure it looked really pretty. I’m going to have to make one for us to eat so I can have that classic photo with the cut cake and piece on the plate.
But for now I just have the whole cake that when in for the men. From what I understand it was well enjoyed. I would love the coconut and chocolate combo – but the hubby does not like coconut. This is why I made it for a night when he would not be at the meeting. I do know that some of the men like coconut ’cause I’d had requests for German chocolate cakes in the past.
