I love working with chicken breasts for dinner – they just make it easy to create an easy chicken meal. You can do so many things with them from chicken in plum sauce to an amazing poached chicken with fruit salsa. Chicken breasts are so convenient to keep on hand for an easy weeknight meal.
I had pulled a chicken breast for dinner but hadn’t completely decided what to make when the hubby came home with a fruit basket. The apples gave me an idea! I had some cheddar in the ‘fridge so I thought stuffing the breast with apples and cheddar would be yummy – and it was. It didn’t take too long to pull together and the results look fancier than the effort put into it. I love meals like that.
Apple and Cheddar Stuffed Chicken Breast
Serves 2
1 large chicken breast
1 medium apple cored, peeled and chopped into small pieces
1 slice of bread, toasted – I used Challah
1 TBS grated Parmesan cheese
1/4 cup shredded cheddar cheese
1/2 tsp herbs de Provence
pinch of salt
1/2 cup panko bread crumbs
1/4 cup flour mixed with 1/2 tsp salt
1 egg mixed with a splash of water
cooking spray
Preheat oven. If you have a convect feature use that and set at 400° If you do not preheat oven to 400°
In a small bowl mix the cut apple, parmesan and cheddar.
Cut the toast into small pieces and add to the apple mixture. Add pinch of salt and herbs de Provence, mix and set aside.
Cut a slit in the chicken breast, salt the inside.
Stuff the breast with the apple mixture. Close with toothpicks.
Dip the chicken breast in flour, then egg, then panko.
Set on a baking sheet covered with foil. Spray with cooking spray.
Bake in the preheated oven for 20 minutes. Check for doneness. If it needs to cook further do so.
If you are not using the convect feature cook the chicken at 400 for 10 minutes then lower the heat to 350° for the balance of the cooking time.
Remove the toothpicks and slice the chicken breast on an angle to serve.
I made the hubby some simple roasted carrot coins and I had the ever present green beans. I opened a jar of my homemade Apple/Plum/Pear Sauce. The chicken breast was still moist and the stuffing was delicious.
How Was This Easy Chicken Meal?
It was a perfect balance of meat to filling and I’m sure I’ll be making this again. The apples were cooked but still had some texture and the cheddar mixed with the bread to make a yummy stuffing. The panko added a nice crunch. I think next time I might add some walnuts to the filling – mmmmmm.
