Easy Pasta with Avocado Sauce and Mixed Vegetables

I had an extra avocado after shopping; I had used one to make one of our favorite meals – sushi salad. Not wanting it to go bad I came up with this easy pasta dinner. A simple pasta sauce and some mixed vegetables. It was quite yummy. Perfect for a night when you need a quick and easy meal.

Pasta with Avocado Sauce and Mixed Vegetables

Serves 2 – 4 depending upon how much pasta and vegetables you add. I made it for 2

  • 8 oz shaped pasta – I used strozzatreti
  • 1 avocado
  • 1/4 to 1/3 cup milk or chicken broth or save the water from the pasta
  • salt and pepper
  • 1 tsp lemon juice
  • 1 10oz package frozen mixed vegetables
  • grated parmesan for serving
  • Preheat oven 350
  • Roast the vegetables until cooked. Set aside. Alternatively, cook the vegetables in the pasta water with the pasta.
  • While the vegetables are cooking heat a large pot of water to a boil and cook the pasta according to package directions.
  • Mash the avocado with the lemon juice.
  • Drain, saving some of the water for the sauce if desired.
  • Return the pasta to the pot and add the mashed avocado. Stir to coat.
  • Add the roasted vegetables and add in the pasta water or hot broth to make a light sauce. Not too much, you don’t want gravy, just enough to coat the pasta. Add salt and pepper to taste.
  • Serve with grated parmesan if desired.

How Was the Avocado Pasta?

Yummy. I make this any time I have a spare avocado. It’s so simple and just really, really good. Cooks up quickly and tastes like it took much longer to make. We both really enjoy it.

If you don’t have the mixed vegetables just leave them out and make a Caesar salad. The sharp dressing is a delightful contrast to the rich avocado.
