Shrimp Recipe: Ginger Lime Shrimp with Apples

The hubby had gone shopping in Missoula and he brough me home a bag of limes – he loves Key Lime Pie so I think it was a hint. I won’t use all of them so it gives me several to play with in the coming weeks in recipes. Looking in the freezer I grabbed some shrimp and I knew that the lime would be delicious with them. But some other flavor was needed – ginger! It would make a perfect flavor pairing for this shrimp recipe. I added some apples for a touch of crunch and sweetness and we had a dinner that both of us enjoyed. It didn’t take at all long to cook. As you well know I am a big fan of seafood with fruit – like the scallops with ginger pineapple I made. It seems I like ginger too.

Shrimp Recipe: Ginger Lime Shrimp with Apples

Serves 2

15 large shrimp, peeled and deveined
1 medium apple, cored, peeled and cut into small pieces
1 lime, zested and juiced – save both
2 tsp grated ginger root
2 TBS vodka
salt and pepper

2 cups prepared brown rice
side vegetable – I served snow peas with peppers and onions for the hubby, beans for me

If the shrimp are frozen, thaw them and then soak them in some milk (using reconstituted powdered milk works just as well) to help get that frozen/fishy smell out of them. It really works very well. It also helps reduce the saltiness of some frozen shrimp. About 20 minutes works fine.

Put the shrimp in a bowl with the lime juice and zest. Add the grated ginger root and a sprinkle of salt and some freshly ground pepper. Let the shrimp sit for about 5 minutes.

Heat a non stick pan over medium heat and when it’s hot add the shrimp. After they have cooked for about 2 minutes, turn them, add the marinade, the vodka and the apples. Continue cooking until the shrimp are just cooked through.

Serve the shrimp over hot brown or white rice with your preferred vegetable on the side.

How Was the Shrimp Recipe?

Notes

Serve with a side vegetable of choice

I don’t include cook time for the rice in the times below, although with an instant pot you can have rice cooked an ready in the time it takes to soak/thaw the shrimp.
