Lemon Basil Shrimp - Easy Shrimp Recipe

I am pleased that I have been able to get in delicious seafood thanks to Sizzlefish (affiliate link). The hubby and I really enjoy meals featuring shrimp, scallops, and fish so I am very pleased that I can still have access despite getting our food in on the big brown truck. This easy shrimp recipe highlights the sweet flavor of the crustacean without overpowering it.

Lemon Basil Shrimp - Easy Shrimp Recipe

Serves 2

  • 8 oz large shrimp, about 10 - 12, thawed if frozen
  • 2 tsp olive oil
  • 1/4 cup chicken stock
  • 1 TBS vodka, tequila or white wine
  • 3 TBS lemon juice
  • 1 garlic clove, finely minced
  • 10 large basil leaves, chiffonaded
  • 2 cups cooked rice
  • side vegetable - I made roasted broccoli

  • Pat the shrimp dry and sprinkle with salt.
  • Heat a skillet over medium heat. When hot add the olive oil.

  • Add the shrimp and cook on each side for 1 minute. Remove to a plate. (they will finish cooking later.)
  • Deglaze the pan with the white wine, vodka or tequila if using. (Otherwise use a bit of the chicken stock.) Add the lemon juice and the chicken stock to the pan.

  • Add the shrimp back in and finish cooking, about 5 minutes. Remove from heat.
  • Stir in half of the basil.

How Was the Lemon Basil Shrimp?

This meal was a hit for two reasons; it tasted great and it came together really quickly. Of course it did take a bit for the shrimp to thaw but if you had fresh shrimp it would be really fast.  Thawing the shrimp was the longest part of this dish. 

You might be thinking that this looks like shrimp picatta and yes, it is a riff on that classic dish. Picatta recipes show up fairly often here on the blog because the hubby loves lemon as a flavoring for his food and well, it’s an easy and tasty way to cook seafood. I decided to add the basil to see what would happen and if you ask me it got even better.

It was really tasty. Nice and bright from the fresh lemon juice and the basil added a lovely balance of flavor. We both enjoyed it and despite it being a meal I tossed together for a quick dinner it’s going to be a regular around here now like Shrimp in Peanut Sauce.
