Peppercorn and Coriander Crusted Pork Recipe

We don’t eat as much meat as we used to but pork is a favorite. I am pleased to share a pork recipe today from the 2020 Christmas with Southern Living Book. Peppercorn and Coriander Crusted Pork Recipe 

The recipe in the book called for a pork loin, I only had boneless chops so I adapted it for what I had on hand.

Serves 2 to 4

  • 2 TBS coriander seeds
  • 1 TBS black peppercorns
  • 2 TBS honey mustard
  • 2 tsp salt
  • 2 – 3 boneless pork chops, trimmed
  • 1 TBS olive oil

  • Heat coriander seeds and peppercorns in a skillet over medium heat until they are fragrant, stirring occasionally about 4 minutes
  • Let cool about 10 minutes and then coarsely crush with a mortar and pestle or transfer to a zip bag and crush with a frying pan.
  • Preheat oven to 350

  • Stir together the honey mustard, crushed spices and salt. Rub all over the pork chops and let marinate 20 minutes.
  • Heat oil in a large, ovenproof skillet, over medium high heat.

  • Add the pork and cook evenly on all sides, about 5 minutes
  • Transfer to the oven to finish cooking until the meat reaches 145 – about 12 – 15 minutes
  • Remove from the oven and let rest.

How Was the Pork Chop Recipe?

It was mighty tasty. The crushed peppercorns gave it just the right amount of heat and the coriander added that taste of “holiday.”  I served it with some of my home canned applesauce and a fresh tomato salad. It was a delicious dinner.
