Chocolate Walnut Cherry Bundt Cake Recipe

Sometimes the best recipes are those that are the ones created from a place of “what do I have in the pantry.” Or in the freezer in the case of this bundt cake recipe mash up. I always have baking chocolate on hand, not to mention a variety of nuts. What really brought this dessert recipe together was the addition of the cherries. It’s times like these that I am thankful that I take the time to freeze cherries every year. That lets me come up with cherry cake recipe whenever I might like.

Chocolate Walnut Cherry Bundt Cake Recipe

Chocolate Walnut Cherry Bundt Cake

2 1/4 cups all purpose flour
1/2 cup finely ground walnuts
1 tsp baking powder
1 tsp salt
1 cup plus 2 TBS unsalted butter at room temperature
3 oz semi sweet chocolate chips
1 3/4 cups sugar
4 large eggs at room temperature
1 TBS pure vanilla extract
1 cup whole milk at room temperature
2 cups cherries, roughly chopped
Confectioner’s sugar for dusting

Preheat oven to 350°
Butter and flour a 12 cup bundt pan.
Add the chocolate and 2 TBS of the butter to a glass or stainless bowl and place over simmering water to melt.
Whisk together the flour, ground walnuts,salt and baking powder. Set aside.
In a stand mixer with the paddle attached cream together the butter and sugar until light and fluffy. Add the eggs, one at at a time, mixing well after each addition.
Add in the vanilla.
With the mixer on low add the flour in thirds, alternating with the milk in halves, beginning and ending with the flour mixture.
Take the bowl from the mixer and gently fold in the cherries.
Take 1/3 of the batter and add it to the melted chocolate and fold together.
Add 2/3 of the vanilla batter to the prepared bundt pan, then add the chocolate batter, then top with the remaining vanilla batter.
Swirl the batter with a butter kniife.
Bake in the preheated oven for 65 – 70 minutes or until a tester comes out clean.

Cool on a wire rack for 15 minutes and then remove from the bundt pan. Cool completely and dust with confectioner’s sugar.

How Was the Cherry Cake Recipe?

This was a delightfully moist, rich cherry cake recipe. The walnuts added a wonderful flavor and bit of crunch and the cherries were a sweet surprise. Needless to say this one will be making another appearance. I think it would also work with strawberries.

I do love a bundt cake and this was an especially good one – flavorful and moist. It got better the next day which is always a bonus. Like the Orange Cranberry Chip Bundt Cake  or the Pear Streusel Bundt Cake it’s definitely a keeper.
