Cooking en Papillote: Salmon, Onions and Peppers with Pomegranates

I do believe that I’ve mentioned a time or two that the hubby loves salmon. I probably have more salmon recipes listed than almost any other type of protein. This is why I was very excited when ZayconFresh made salmon a part of their line up. The hubby and I bought a box when it became available in our area and I’ve cooked him a couple of meals. I’m planning a few other things and I’ll share them as I make them. One of my favorite ways to prepare his salmon is cooking en papillote; it never fails to present a delicious, well cooked piece of fish.

Salmon, Onions and Peppers en Papillote with Pomegranates

Serves 2

2 6 oz salmon filets
1/2 cup diced sweet onions
1 cup sliced green pepper
1 cup pomegranate seeds, divided
1 cup orange juice
1/2 cup vodka
salt and pepper
olive oil
parchment paper
2 cups of prepared Jasmine rice

Preheat oven to 350°
Spread a little olive oil on the sheets of parchment paper
Sprinkle the salmon filets with salt and pepper
Mix the orange juice and vodka. Add a healthy pinch of salt. set aside
Mix the onions and peppers together and divide in half.
Place one salmon filet on a piece of parchment, top with one of the halves of the vegetables.
Add 1/4 cup of pomegranate seeds
Fold up the packet until just about closed, add half of the vodka/orange juice mixture.
Repeat with the second salmon filet.
Place the parchment packets on a baking sheet and place the in the preheated oven. Bake for 15 minutes.
Place 1 cup of hot rice on a plate.

CAREFULLY open the fish packet and move the fish and vegetables on top of the rice. Pour the juices over top.
Sprinkle 1/4 cup of pomegranate seeds over top.
Repeat with the second piece of fish.

It also looks very festive, doesn’t it? Not that it’s a holiday only dish! The hubby really enjoyed it. He liked the combination of the sweet onions and peppers with the tart pomegranates on the rich fish. He loves when I cook his salmon this way because he says it’s always moist and delicious.
