Quick and Easy Chicken Recipe

I had one of those, “what am I going to cook for dinner nights” the other night. I had pulled a chicken breast out of the freezer but by the time it came to make dinner I still had no idea of what I was going to make. I knew I needed some quick and easy chicken recipe inspiration. So I looked around and I found the tomatoes I had canned last year and I knew I could whip something up with them.

And so I did.

I didn’t need much else and I didn’t want to spend too long waiting to eat. It was a meal that came together in about half an hour. And it was very tasty. One chicken breast ended up feeding us for three meals too which was pretty awesome. I’ll show the other two meals in a later post.

Quick and Easy Chicken Parmesan

Serves 2 (with leftover chicken)

1 boneless chicken breast
1/4 cup all purpose flour
1 tsp salt
1 TBS olive oil
16 oz canned crushed tomatoes
1 clove garlic, minced
1/4 cup shredded fresh basil
2 TBS chopped fresh marjoram
1 TBS sugar
1/4 cup vodka (optional)
2 cups cooked elbow macaroni
2 TBS pine nuts, toasted
1/4 cup grated Parmesan cheese

Thinly slice the chicken breast.
Add the salt to the flour and mix well.
Dredge the pieces of chicken in the flour and set aside.
Add the oil to a saute pan over medium high heat.
Add the chicken slices and cook about a minute on each side. Remove to a plate and set aside. Repeat until all pieces of chicken are cooked.

Add the garlic to the pan and stir fry for about half a minute.
Add the tomatoes and bring to a boil.
Add the basil and marjoram.
Add the vodka if using.
Let simmer until slightly reduced. Taste and adjust seasoning if necessary.
Return the chicken to the pan and keep warm.

Add the macaroni to a small pot and add some sauce to warm it up.

To serve: if using spinach, add half to the plate, cover with half of the elbows. Add two or three slices of chicken. Sprinkle with half of the toasted pine nuts and half of the cheese.

I am not a fan of warm spinach so I had mine without. It was a very tasty meal. It all came together quickly and using items I had in my pantry/freezer. I went from “what am I going to make” to the table in half an hour. I love meals like that!

I used one of my ZayconFresh chicken breasts. I do love the chicken from Zaycon. I’ve raved on it before. I cut the one breast into thin slices and it fed us well this night and then we went on to have it two more nights. I just ordered wild caught shrimp and salmon from them. I have never been disappointed with anything I have purchased.
